Being a very busy working mom with three boys, who are all in travel sports and school activities, caused me to neglect myself.  All of the running meant lots of fast food stops, not to mention lack of exercise, which began to take its toll on my body.

The best thing I did was to start training with Kelvin.  The sessions were fun and engaging so it never felt like a chore and he gave me the encouragement and support I needed to keep going.  I did exercises and moved muscles that I never knew existed!

I lost 17 pounds of unwanted fat!

Aussie Omelet)

A great hearty Aussie omelet (well, we think it is!). Well worth the effort.

Here's What You Need
  • 5 eggs
  • 1 onion, diced
  • 1/4 cup diced green bell pepper
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tomato, sliced
  • 4 ounces shredded Cheddar cheese
  • 12 medium shrimp - peeled and deveined
  • 1 clove garlic, crushed
  • 1 teaspoon curry powder
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup milk
Instructions
  1. <p>In a medium nonstick saucepan over medium heat, cook and stir the onion, garlic, mushrooms and pepper until tender, about 5 minutes Mix in shrimp, and cook until opaque.
  2. Remove from heat, and set aside.
  3. In a medium bowl, beat together eggs and milk.
  4. Mix in curry powder, salt and pepper.
  5. Heat the olive oil in a medium saucepan over medium heat.
  6. Pour in egg mixture, and cook 5 minutes, or until firm.
  7. Top with Cheddar cheese, tomato and the onion and shrimp mixture.
  8. Fold eggs over filling, and serve warm.
